The book that I chose to translate is “"on food and cooking: the science and lorge of the kitchen” – completely revised and updated by Harold McGee, containing innumerable small topics about cooking ingredients. Howerver, due to the limited time, this graduation paper just concentrates on the seventh chapter named “ a survey of common fruits” of the book. The chapter is translated from English into Vietnamese, and some important points are analyzed particularly.
